With the older two kids off to camp this past week, Greta and I were able to focus on slowing down. With three kids, it’s so nice to be able to spend one on one time with each child. Growing up, my dad would take one of us three kids out to breakfast on Saturday mornings. We always kept track of whose turn it was and we got to choose where we went. I usually chose a local cafe, the Viking. It was such a special feeling to sit alone with my dad and have his undivided attention, discussing whatever was important to me at the time. I still remember details of that cafe: the skinny owner sitting behind the cash register, the waitresses rushing by, barely stopping as they refilled coffee cups and the tall wooden booths that seemed to envelope you as you sat down. I always ordered their gigantic caramel roll which I would unwind slowly to enjoy its gooey goodness. I’m not even sure how long we kept this routine up but the memory sticks out clearly in my mind.
This week, Greta and I were able to enjoy that one on one time in a few ways: going out for lunch, taking walks, catching fireflies and making special snacks to enjoy on the deck.
I found a great recipe from Ina Garten of the Barefoot Contessa while going through one of my cookbooks. I’ve already made it several times this summer. I love it because it’s sweetened with apple juice instead of sugar.
Here’s the recipe:
4 Celestial Seasonings Lemon Zinger tea bags
4 Celestial Seasonings Red Zinger tea bags (I couldn’t find Red Zinger so used Raspberry Zinger)
4 cups pure apple juice
Steep the 8 tea bags in 4 cups of boiling water for about 10 minutes. Discard the tea bags. Combine the tea with the apple juice and refrigerate until cold. Serve over ice.
So easy and so delicious!
