Here’s another recipe for last minute gift giving (and healthy too!):
Granola
5 c. oatmeal (old fashioned)
1/4 c. vegetable oil (or canola oil)
1/2 c. honey
1/2 c. pure maple syrup
1 1/2 c. toasted coconut
1 c. sunflower seeds
1/4 c. sesame seeds
1/2 c. wheat germ
1/2 c. sliced almonds
*note: the last four ingredients can be substituted with walnuts, pecans and ground flaxseed – just use what you like best and have on hand. Also, I like to substitute Agave Nectar for the liquid sweetener.
Preheat oven to 400 degrees. Toast coconut and set aside. Combine other ingredients and place in 9×13 inch pan or large roasting pan if you have it Bake 20 minutes, stirring occasionally. Add coconut and bake an additional 5 minutes. Remove from oven and cool completely before storing in an air-tight container.
Perfect gift alternative to all those holiday sweets (i.e. Chocolate Peanut Butter Bon Bons of last post)!
Include a copy of the recipe and you’re good to go.
Hope you have a great Christmas!
Elizabeth
